Child BackPack Baby Carrier
The first thing is to get a good baby carrier hiking backpack. It will be a game changer for both you and baby. You are comfortable, they are comfortable, everyone is happy and you can actually enjoy a long hike with your kid in tow.
We went back and forth between the Osprey Poco Child Carrier and Deuter Kid Comfort. We ultimately ended up with Deuter. We went this route because as they are both expensive and had good reviews, the Deuter came with a canopy for your child, which was a must for sun protection. It also had a 14L storage compartment and would allow us to carry our child well past the toddler stage. And it was also comfortable for both my 5'3 self and my husband's 6'3 self which is near impossible for regular backpacks to find one that is comfortable for both of us.

Infant baby carrier
A good baby carrier when they are just too little for the child backpack carriers.
Kevin and I always had the deal that I carry them (in my belly) for the first 9 months of their life and then he carries them for all times after that. But having 2 under 2 there for a while, meant that if we wanted to continue to hike, I would have to carry a child, too. We have two of these style carriers (again because 2 under 2 calls for that sometimes). So we have a "cheap" one and a more "expensive one". And honestly, I like them both about the same. I have used them both in all position baby belly to belly with mom, baby back to belly with mom, and baby on mom's back. I prefer them much using them on my front when hiking because I just felt like the boys sat too low if they were on my back and they could not see as much and were not as happy. With both carriers with baby on front, I felt the baby was very supported even as we have done incredibly crazy hikes that I would not recommend doing with a baby on board.

Bottle leashes
Leashes to hold anything you don't want to lose on the trail or hike 2 miles back to go looking for. We have attached these guys to bottles/sippy cups, pacifiers you name it. We have lost pacifiers but just using the clip on ones which when you have a pacifier addicted child can ruin the hike. My kids were always obsessed with the Wubbanubs, so we would attached these around the leg and even if they fell out when the boys fell asleep, we would not lose the pacifier.

Child Leash
Kevin and I agree to disagree on this one. I like having toddler's on the leash when we are hiking so they can explore but not veer off to far or find something too dangerous. Kev wants the kids to be able to explore as much as possible on their own and fully trusts our kids. But I always feel more comfortable at least when we are dealing with cliffs and potentially dangerous hikes to have this in the bag, just in case

Other than snacks, drinks, and more snacks and drinks, that is about all we pack when we hike. Lighter is always better when you are hiking uphill and on cliffs.
